The gaĂșcho way
Churrasco began with the gaĂșchos, the cowboys of Brazil's southern plains, who roasted meat on skewers over open fires. Today the churrascaria is a Brazilian institution, and the rodĂzio, where servers keep bringing skewers to your table, is a celebration in itself.
After a day at sea, there's no better way to bring both families together than a long table and far too much food. Cowboys and gaĂșchos, finally at the same dinner.
Did you know?
- At a rodĂzio, a little card on your table runs the show: green means 'keep it coming', red means 'I need a break'.
- Picanha is Brazil's favorite cut, cooked with nothing but coarse salt.
- Farofa, toasted cassava flour, goes on almost everything. Trust us.
